Disable OT collaborative editing for a document.

Serializes the current collab document to markdown, saves to session, cleans up collab Redis keys, and sets collab_enabled=False. Broadcasts DOCUMENT_STATE_CHANGED so all clients switch back to REST save.

Phase C2: RequireOwner — only deal owners can toggle collab mode.
